One of the things that my family loves to do is watch movies. Another favorite thing we love to do is eat. So combining the two to enjoy a movie night together is what you can find us doing most Friday evenings. Sometimes other nights too, wink wink. Today I’m sharing how to make a yummy Minion fruit pizza. It’s perfect to watch any of the Minions franchise or celebrate the newest movie being released this summer! While we were waiting for Mike to get home for movie night, I made a Minions fruit pizza. This was the perfect thing to snack on while watching our movie. Since we would be watching those adorable Minions, I figured the fruit pizza should reflect them! Plus, if you happen to have kids who might be nervous to try new things, this is a great way to get them actually excited about noshing on new fruits!

This is an easy treat to make for your family. All it involves is some pizza crust, a simple cream cheese spread, and your favorite blue and yellow fruit! This a recipe for sweet pizza dough, but you can also use your favorite pizza recipe or even a store bought crust. You might also want a little minion baking buddy with you.

Once you have your dough all ready to go, roll it out in an oval shape. Make sure you reserve a small amount to make the goggles. I mean, what’s a Minion without their goggles?! After you have your minion shape on your prepped pan, brush the edges of the dough with an egg yolk wash and put in the oven to bake!

The “hardest” part is done! Now all you need is a package of softened cream cheese to spread over the pizza once it’s done and cooled. I personally like to add a teaspoon of sugar to cream cheese when pairing with fruit. Then, top with your favorite fruit. I used blueberries, pineapples, and mangoes. I also added some blueberry yogurt to the blue “overalls” portion. Throw a few marshmallows in the goggle portion too–it’s so yummy with the cream cheese!
Minion fruit pizza ingredients:
- Pizza crust
- 8 oz. of cream cheese
- 4 oz. of blueberry yogurt
- yellow fruit (pineapples, mangoes, pears, bananas…)
- blueberries
- marshmallows
- 1 2/3 cups of warm water
- 2 tsp . of yeast
- 5 cups of flour
- 1 tsp . of salt
- 1 TBSP of sugar
- 1 TBSP of honey

Add all ingredients together in your Kitchen-Aid or similar and mix with dough hook. Place dough in an oiled bowl and allow to rise until double in size, usually a couple hours.

Roll dough out on oiled and dusted (I like to use cornmeal) cookie sheet or pizza pan. Allow to rise on pan again.

Preheat oven to 450°. Brush the raised parts of dough (the edges) with egg yolk. Bake for 12-15 minutes. Check during baking and pierce any bubbles with a fork.

Remove from pan and add dessert toppings of choice.
I always like to proof my yeast first: Add yeast to warm water with 1 tsp. of the sugar and stir, leave alone for a few minutes to activate yeast.
