We are in the hottest days of summer and what says summer more than ice cream? When Mike and I got married he introduced me to Fenton’s and their toasted almond ice cream. It’s safe to say my life has never been the same. This is Mike’s favorite ice cream flavor of all time, and it’s definitely in my top five as well. However, we can’t always make it to our favorite ice cream shops to grab some. That’s why this homemade ice cream recipe is perfect!

You might be familiar with Fenton’s toasted almond ice cream. Leatherby’s also has a version of the same flavor. And when you pour their caramel sauce on top, it tastes like how I imagine every food item in heaven tastes. If you don’t happen to live near a Fenton’s or Leatherby’s, don’t worry. With this toasted almond ice cream recipe, you too can experience this miracle of dairy delight right at home!

Dry roast some almonds and toss them into this ice cream recipe and it’s perfection. The perfect cool, creamy, and crunchy treat. As long as you’re not allergic to tree nuts. In which case, I have a very delicious boysenberry ice cream recipe you might like instead. But don’t make and eat this one, oy vey.

Mike and I both agree the best way to enjoy this ice cream is with caramel topping. Real caramel topping, not some cheap imitation from your local supermarket. Homemade is good, but if you can get your hands on some Fenton’s or Leatherby’s caramel then you are in for a real treat. Toasted almond with caramel on top–the way that God intended this treat to be consumed.

Toasted Almond Ice Cream

Ingredients
  • 1 cup chilled milk (We use skim, but anything works.)
  • ¾ cup granulated sugar
  • 2 cups chilled heavy cream
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • ¼ cup crushed almonds (We use almonds that we salt and roast ourselves.)
  • Brown food coloring (Optional!)
Instructions
  1. Dry roast the crushed almonds on the stove top, allow to cool.

  2. In a medium bowl, whisk the milk and granulated sugar together until sugar is dissolved. Stir in the heavy cream and extracts. Turn on your mixer and pour mixture in.

  3. About halfway through, add in your almonds and food coloring, if desired.

  4. Once the ice cream maker is finished, allow ice cream to continue hardening a few hours in the freezer, or eat soft serve as is.
