Breakfast and cupcakes in the same title? Sure, why not? After all, what’s the only difference between a muffin and a cupcake? Pretty much just the frosting, right? I feel like I can see my friend Lynn simultaneously smiling and shaking her head at me with that statement.
I concocted these tasty berry breakfast cupcakes not too long ago and I am definitely a fan. They’re also really easy to make, the secret is cake mix. 😉

Start with a white cake mix, replace the oil with applesauce, and add 1 cup of fresh or frozen berries and, voila! That’s it; although I did also add a crumb topping, to make them more muffinsh (that’s a word, right?). The crumble topping consists of mixing together: 1/2 cup of rolled oats, 1/4 cup of brown sugar, 3 TBSP. of flour, 1/8 tsp. of ground cinnamon, and 2 TBSP. of butter (cubed).
I made a bunch and added some to my freezer meal stash. Yum.
