s’more dipped strawberries

Summer is in full swing, and few things say “summer” like a s’more, don’t you think? (“Hey Smalls, you wanna s’more?” ” Some more of what?” “No, do you wanna s’more?” ” I haven’t had anything yet, so how can I have some more of nothing?”
If you follow me on Instagram, you might have seen me post some pictures a week or so ago of some chocolate covered strawberries. Unfortunately, those pictures really didn’t do them justice, because these s’more dipped strawberries are SO GOOD!

When you’re making chocolate covered strawberries you always want to make sure you start with a clean, and DRY berry. I always make sure I pat them with a paper towel after rinsing them off and before dipping.
For these, you’ll start with a layer of chocolate. My favorite is always a mixture of milk and semi-sweet because I think the flavor is good, and the melting point is a easy to work with. You can either melt your chocolate in the microwave (which I did this time around, low and slow is the name of the game), or use a double-boiler method (like I did in {this} post).
Once your first chocolate layer is done and set (it doesn’t have to be completely hard, but at least somewhat set up), then you’re ready for your marshmallow layer. I would imagine you could also use that marshmallow fluff stuff for this layer, but I’ve never really used that before so I’m not exactly sure of the consistency. Besides, I definitely didn’t have any laying around, so I went for the real deal. For this step you’re going to have to move fast, so I just did two marshmallows at a time. Put your marshmallows on a microwave safe plate and heat for about 20 seconds (your time may vary), then dip your chocolate covered strawberry into the giant, melted marshmallow and swirl around, making sure your strawberry is well-covered.
Once you have your marshmallow layer on there, let it set up again for a little bit. This is what your strawberries should look like at this point:
So, you’ve got your first layer of chocolate, and your layer of marshmallow. Now your ready for your second layer of chocolate, followed quickly by dipping your strawberry into some crushed graham cracker crumbs.
