We have heavy cream in the fridge I wanted to be sure to use, and I thought Cinco de Mayo was the perfect excuse to try making horchata ice cream again! I first tried this a little over a year ago, and it was fine, but I knew I could do better. 😉
But don’t go anywhere yet, I promised you homemade ice cream sandwiches!
Following //this// recipe but using a french vanilla cake mix, gave me the cookie for these tasty horchata ice cream sandwiches. Again, don’t make the cake mix as per directions on the box, use the recipe in the link above!
To make these more like ice cream sandwiches I rolled the mix out flat between two sheets of parchment paper, then used a rectangle container I had as a cookie cutter once the sheet had completely cooled.
Making them this way, I was able to easily make 6 ice cream sandwiches, with plenty of ice cream leftover as well.
You want to make sure that you make the cookies first and they have a chance to cool, because you’ll want to spread the ice cream on before it set up hard in the freezer.
Of course I just had to add the sprinkles for fun, plus my kids are obsessed with sprinkles.
But really, who isn’t?
