One of the things that my family loves to do is watch movies. Another favorite thing we love to do is eat.
Seriously.
So combining the two to enjoy a movie night together is what you can find us doing most Friday evenings and sometimes other nights too. Since becoming a parent over five years ago, many of our “date nights” have consisted of family dates watching a cute movie together and enjoying some yummy snacks. 
When we found out that the latest film from Illumination Entertainment in the Despicable Me franchise – Minions © 2015 Universal Studios. All rights reserved. – was going to be released on Blu-ray/DVD December 8, we knew it would be the perfect movie choice for our family movie night that week! Our kids just love Kevin, Stuart, and Bob. 
 
In anticipation of Minions coming out I went on their website to find a local store where I could buy it. You can bet that the very next day we went and picked up not only the movie but some other fun stuff as well. My kids were in heaven with all the cute minion toys to choose from and it made them even more excited for our family movie night!
While we were (not so patiently) waiting for Mike to get home so we could start our movie night, I made a yummy fruit pizza to snack on while we were enjoying Minions. Of course, since we would be watching those cute little yellow guys with their funny goggles, I figured the fruit pizza should be in a minion shape too! Plus, if you happen to have kids who might be nervous to try new things, this is a great way to get them actually excited about noshing on new fruits!
 

This is an easy treat to make for your family; all it involves is some pizza crust, a simple cream cheese spread, and your favorite blue and yellow fruit! Youis a recipe for sweet pizza dough, but you can also use your favorite pizza recipe or even a store bought crust! You might also want a little minion baking buddy with you. 😉

Once you have your dough all ready to go, roll it out in an oval shape, reserving a small amount to make the goggles (what’s a minion without their goggles?!). After you have your minion shape on your prepped pan, brush the edges of the dough with an egg yolk wash and put in the oven to bake!

 
The “hardest” part is done! Now all you need is a package of softened cream cheese (I like to add a teaspoon of sugar) to spread over the pizza once it’s done and cooled, and your favorite fruit; I used blueberries, pineapples, and mangoes. I also added some blueberry yogurt to the blue “overalls” portion. Throw a few marshmallows in the goggle portion too – soooo yummy with the cream cheese!
 
Minion Fruit Pizza:
  • Pizza crust 
  • 8 oz. of cream cheese
  • 4 oz. of blueberry yogurt
  • yellow fruit (pineapples, mangoes, pears, bananas…)
  • blueberries
  • marshmallows

Luckily, my kids were keeping busy while I was whipping this up by coloring their minion pictures and playing with all their Kevins, Stuarts, and Bobs we had picked up at the store. By the time Mike got home we were ready to watch Minions and eat our yummy fruit pizza!

I also realized while we were watching the movie that I think my 22 month old daughter speaks Minionese. 😉
 
Sweet Pizza Dough

Recipe for a sweet pizza dough, perfect for a fruit or dessert pizza.

Ingredients
  • 1 2/3 cups of warm water
  • 2 tsp . of yeast
  • 5 cups of flour
  • 1 tsp . of salt
  • 1 TBSP of sugar
  • 1 TBSP of honey
Instructions
  1. Add all ingredients together in your Kitchen-Aid or similar and mix with dough hook. Place dough in an oiled bowl and allow to rise until double in size, usually a couple hours.
  2. Roll dough out on oiled and dusted (I like to use cornmeal) cookie sheet or pizza pan. Allow to rise on pan again.
  3. Preheat oven to 450°. Brush the raised parts of dough (the edges) with egg yolk. Bake for 12-15 minutes. Check during baking and pierce any bubbles with a fork.
  4. Remove from pan and add dessert toppings of choice.
Recipe Notes

I always like to proof my yeast first: Add yeast to warm water with 1 tsp. of the sugar and stir, leave alone for a few minutes to activate yeast.

Also, also, do you spell it mangos or mangoes? Apparently both are correct, but mangoes is preferred… but don’t you think it looks weird?!
