pot o’ gold cookies

I wanted to wish y’all a happy St. Patrick’s Day and share these Pot o’ Gold cookies that I made with my two favorite guys.

This was my little dove’s first time helping mommy in the kitchen, how cute is he??? He really enjoyed pouring the ingredients into the KitchenAid and watching it spin around, but when it came to forming the dough balls, he preferred to just grab some and eat it… oh well, a little raw dough never hurt anyone, right? Right?

Anyway, the recipe for these Pot o’ Gold cookies is pretty simple:
-1 box of cake mix (I used French Vanilla because it’s what I had)
-3/4 cup of shortening
-2 eggs
-1/2 cup of rainbow sprinkles
-Rolos

First, you mix all the ingredients except for the Rolos. Once everything is mixed together well, then you take a ball of dough and wrap it around a Rolo (oh yeah, unwrap the Rolo first 😉). You want to make sure that the Rolo is completely covered with dough so that it doesn’t melt out as the cookie bakes.

Bake for 8-10 minutes at 350 degrees; and that’s basically it, simple right? They’re going to look pretty fat when they’re on the cookie sheet, but they’ll flatten out as they bake and cool.

When they’re done you have a soft rainbow cookie with delicious melted caramel in the middle, which is why I call them Pot o’ Gold cookies!

    Those look so good! I love funfetti cookies and rolos, but I would never had put them together, genius! Can't wait to try them!
