Last year I discovered {these} delicious homemade peppermint patties from Blue-Eyed Bakers. I made a batch last year, and this year I made a double batch because I love them soooooo much (and so do the people I give them to).
But I also decided to tweak the recipe slightly to make some berry truffles.
All I did was substitute the peppermint extract for 2 tsp. of raspberry extract and 1 tsp. of strawberry extract. I also added some food coloring. I followed the same basic instructions for the peppermint patties, but rolled the cream into 1 inch balls before dipping, instead of forming patties.
I think they turned out pretty good, but the peppermint patties are still my favorite. 🙂
