What’s your go-to Easter dessert? Personally, I like something easy. And springtime makes me want all the light treats. So somehow, I started making trifles to enjoy after Easter dinner. It’s a personal challenge to try and make a different one ever year. Don’t worry, no bunnies were harmed in the making of this trifle. And, if the name of this dessert conjures up images of a dessert gone wrong, you can call it a carrot cake trifle, I’ll allow it. Whatever you call it, this bunny trifle is easy and delicious to make!

I wanted to make a fun Easter dessert and I came up with this bunny trifle. It’s simply layers of carrot cake, pudding, and cream cheese frosting. The sweet surprise though is the caramelized carrots. The combo makes this a scrumptious snack that any bunny would love to devour! Of course, I also had to add bunny Peeps around the edge to add to the cuteness factor. I don’t think you could get a more bunny-approved dessert if you tried. Well, maybe grass, but who wants to eat that?

How to caramelize carrots for dessert.

But Justine, caramelized carrots?! Yep! Lightly sauteed in some butter, brown sugar, and just a hint of salt, these naturally sweet carrots get even sweeter. When they’re cooked this way they go perfectly with an Easter dessert! If you really can’t get behind carrots in this bunny trifle you can leave them out–no hard feelings, I promise. Personally, I think they add a little something, but I know they might not be for everyone.
