One thing that my small city has an abundance of is yummy, unique places to scarf down breakfast or brunch. Which is perfect because I LOVE breakfast foods! A few months ago my in-laws took us to one that we had been wanting to try for awhile, Katrina’s Cafe, and thanks to Yelp I knew exactly what I wanted to try, their lemon yogurt pancakes. Ever since then I’ve been dreaming of that fresh, citrus flavor that perfectly compliments delicious, fluffy pancakes.
I tried replicating it at home with lemon flavored yogurt and some lemon juice, but the flavor wasn’t nearly strong enough. Then I realized that lemon essential oil would do the trick quite nicely! I’ve made this both with lemon yogurt (which definitely helps with the lemon flavor) and also plain Greek yogurt (which also turns out well, but you’ll want to add more lemon essential oil).

    Delish! Now I want pancakes, I would've never thought to add lemon but with a side of fruit that sounds like the most delish brunch ever!!!

    I, too, am a lemon junkie! I have it in my water, on most meats I eat, and I even like a fresh lemon wedge in my Coca-Cola when I go to Sonic for happy hour! I will be giving these a try for sure!

    I love lemon pancakes! My favorite are Dutch Babies. German style pancakes with lemon juice and powdered sugar on top. SO good! =)

    I am a huge fan of breakfast foods and esp funky pancakes – we just did pumpkin ones because it is almost spring so makes sense yes? I actually have a recipe somebody gave me for lemon poppyseed ones that I've been waiting for spring to try! And well we are in FL and it has been way too hot this week so it seems like spring enough. mmm pancakes. Yogurt sounds good too. Probably healthier eh. I'll add these to the list!

    Lemon poppyseed pancakes sounds SO good! And I love yogurt in my pancakes, makes them so moist! And if you use Greek yogurt it adds some great protein!
