I am a firm believer that some foods just should not be green. Green eggs and ham? Never sounded appealing to me. But I do like festive holiday desserts. So when it comes to this green-hued St. Patrick’s Day dessert? These mini trifles should absolutely be green. Keep reading to see how I made this chocolate and mint shamrock trifle! It’s so easy–and so tasty!

how to make this easy St. Patrick’s Day dessert

For these St. Patrick’s Day mini trifles I used a yellow cake mix and added some green food coloring. The green tint really makes it a dessert worthy of St. Patrick’s Day. When it came time to bake the cake I used a jelly roll pan. This made it slightly larger, so the cake would bake in a thinner layer. Once the cake had cooled slightly, I used a glass measuring cup that was slightly smaller than my jars to cut out circles of cake.

  • chocolate pudding
  • chocolate syrup
  • mint cookies
  • whipped topping

To assemble the mini trifles I layered the ingredients in half pint jars. However, you could easily use a different size and adjust your layers accordingly.

Start with a layer of cake, then some chocolate syrup (mostly around the edge of the glass), then pudding, crushed mint cookies, another cake layer, some more chocolate syrup (again, concentrating around the edge), whipped topping, and finish it off with more crushed cookies. And that’s it! An easy and delicious St. Patrick’s Day dessert!

Mini trifles in mason jars are really fun when you’re having dinner guests over too. Everybody can have their own little personal dessert!

    It's so simple to make, you can even do it ahead of time and save adding the whipped topping for last minute (it doesn't look as pretty once its sat for awhile).
