As you might have gathered from this post, I am a big fan of green chili. I first fell became acquainted with it when we lived in Texas and the courtship has grown over time. There was actually a restaurant there in Lubbock that was a favorite of ours that served—get this—Tex-Italian food. I kid you not. They even had green chili in their pasta dishes! I still think about that place all the time, usually while drooling. So when it comes to green chili it knows no borders of meal times or cuisine in our household. When Influenster sent me a coupon for some free Hormel Taco Meats I knew right away that green chili had to be involved somehow.
I took the idea of taco night and kind of spun it on its head, because truth be told, we love taco night all the time, even if it’s not technically night. 😉
This Southwest Omelette combines Hormel’s tasty variety of shredded pork taco meat with cheese and green chili. I used a sharp cheddar cheese because I knew it would pair well with both the pork and the green chili, but I also think a Monterey Jack or Pepper Jack cheese would be delicious. Using four eggs makes this an omelette big enough for two people to enjoy, especially once you load it up with lots of the pork. No real measuring involved, just a big handful of the Hormel taco Meats Pork, smaller handful of cheese, and a few tablespoons of green chili.
By the way, did you know a trick to help you flip an omelette cleanly is to scramble the eggs in the pan ever-so-slightly once they’ve cooked for a few seconds? Then keep cooking it until it’s basically cooked through, and then fold it together.
This omelette came together in a snap because the Hormel Taco Meats are so easy to use in the kitchen; they’re already fully cooked and seasoned, completely ready to go! All you have to do is reheat in the microwave or the on the stove top (I chose the stove). The price point is a little higher than I would typically spend money on (our grocery budget is pretty tight), but as my husband pointed out, with the price of meat it’s really not that bad. And I’m not going to lie, I LOVE shortcuts in the kitchen, especially when they’re delicious!
Southwest Omelette:
- 4 eggs (and splash of milk for scrambled egg consistency)
- Hormel Pork Taco Meat
- Cheddar Cheese
- Green Chili
