Brownies and I have a very close, personal relationship.
Don’t be jealous.
Years ago, before I got married but was still living at home (because, poor college student) it was fairly common for some of my friends to come home with me from church for an afternoon of hanging out and brownie making.
Also, not unusual for them to come over on a weeknight to hang out in the hot tub and make brownies. Oh, and also karaoke… and brownies. You know, because we were all super cool and we all loved brownies. I really don’t know how we didn’t all weigh 500 pounds, yet somehow we all remained relatively fit and full of delicious brownies.
It is my belief that there is always room for a brownie. Brownies will never let you down. They always have your back. They are the truest friend.
Now that I’ve shared my love for brownies with you, let me segue into another tasty treat that I love, and that is cookie butter.

Cookie butter is made from Speculoos cookies and is a pretty unique and tasty flavor. I could eat it right out of the jar.
Not that I would ever do that.
Nope.
This recipe uses the taste of Biscoff (a brand of Speculoos cookies) for a delicious and sophisticated update to your favorite brownie recipe.
- 1 box of brownie mix or your favorite homemade brownie recipe
- 2 TBSP of butter melted
- 1 package of Biscoff cookies; at least 20 cookies whole and 8 cookies crushed or 1/2 cup
- 1/4 cup of cookie butter melted

Lay out whole Biscoff cookies in the bottom of a greased 9 x 13" pan and cover with brownie batter.

Bake according to the instructions FOR HALF THE TIME.

Meanwhile, in a food processor combine 8 cookies and the melted butter. Once the brownies have baked for half the time, take out and sprinkle the crushed cookies on top. Put back in the oven and continue baking for remaining time.

Once brownies are finished baking drizzle with melted cookie butter.

Allow to cool completely, then cut into squares.
To melt the cookie butter spoon desired amount into a microwave safe bowl and heat in the microwave for about 20-30 seconds.

Yes, it is a sign. Although you should never need a sign to make brownies. 😉
I have been totally unwilling to try the cookie butter because I just know as soon as I try it I’m going to be helplessly addicted!!!

It can be quite dangerous. But I’ve been able to avoid eating a whole jar in one sitting, and I have pretty much zero will power. 😉

Cookie butter IS really delicious! It comes in smooth and crunchy and I actually think I prefer the crunchy, but smooth is good for this recipe. 🙂
