I was thinking the other day that I so rarely share recipes other than desserts on the blog that y’all probably think that we either (a) eat out a lot, or (b) all we eat is junk food.
Neither of those is true. Although a part of me wishes they both were.
We actually eat at home most nights, and most of the time when I cook I either do it in bulk so I have extra for freezer meals, or I keep it something fairly simple to help minimize cleanup.
This recipe falls into the later category. It might seem involved with extra steps (I have to sear it AND bake it?! Son of a billy goat!), but really it goes quickly and in less than an hour you can have an awesome meal!
Searing your meat before you bake it helps to seal in the juices and flavor, resulting in a cut of meat that will come out perfectly cooked but not dry. That’s also my favorite way to cook chicken or steak indoors too.
This recipe uses brown sugar for a slightly sweet, lightly caramelized coating. I recommend adding some red pepper too for a little bit of heat, it’s a nice touch!
How do you like to cook pork?
- 4 boneless pork chops
- 4 TBSP of butter
- 2 teaspoons garlic minced
- 1 egg beaten
- 1/2 cup of bread crumbs
- 2 TBSP of brown sugar
- Salt and pepper to taste
- Red pepper optional, to taste

Preheat oven to 350° and heat a large skillet over medium high heat.

Mix ingredients together for coating in a shallow bowl. Pour beaten egg in another shallow bowl.

Melt 4 TBSP of butter in skillet and add 2 teaspoons of minced garlic. Saute lightly but be careful, garlic can burn quickly!

Meanwhile, dip each pork chop in egg wash, then dredge in bread crumb mixture.

Brown each side of the pork chop on the skillet, cooking a couple minutes on each side.

Place pork chops in a parchment paper lined baking dish and bake about 20 minutes, or until the internal temperature reaches 145°.

This sounds delicious! The missionaries are coming over later this week and I think I might make this for them.
I always end up trying new things when the missionaries are coming over and then I’m like, “why am I experimenting on guests?!” It always turns out good though. 🙂
