Simple Blueberry & Apple Cobbler

Lately I have been all about simplifying.

Prioritizing my time.

Focusing on the things that actually matter.

And slowly I have been letting go of certain things. For example, the other day we had some friends over for dinner and I served a store-bought cake! Imagine my surprise when the world didn’t stop spinning on its axis. (I hope you’re able to sense the heavy sarcasm here.)

Simple Blueberry & Apple Cobbler

This cobbler recipe is all about the simple, for sure. With only 4 ingredients you can serve a large group (the recipe will either make a 9×13″ pan or two pie tins) and it is so good. You can also easily switch up the flavors; in fact, for our Zion trip last year I made two for our large group, a chocolate berry one and a peach one.

With Independence Day coming up on Monday here in the states, I felt like nothing really said “America” as much as blueberries and apples.

Ingredients
  • 1 box of yellow cake mix
  • 1 can of blueberry pie filling
  • 1 can of apple pie filling
  • 1 stick of butter 1/2 cup
Instructions
  1. Grease the bottom and sides of a 9x13" pan, OR two pie tins.
  2. Mix the two cans of pie filling together and pour into the 9x13" pan, or half into each of the pie tins.
  3. Sprinkle the cake mix on top of the filling (divide in half if using two pans).
  4. Slice butter and lay on top of cake mix (divide in half if using two pans).
  5. Bake at temperature called for on cake mix box (mine was 350°) for about 30 minutes. Begin checking at 25 mintues.

On the topic of simplicity, let’s segue briefly into this little blog here. Normally I would take the entire month of August off for a little summer break for myself. After a lot of thinking it over and going back and forth, I’ve decided that this year I’m not going to do that. However, I am going to do a trial run of only posting twice a week for the months of July and August. I will try to stick to Mondays and Wednesdays, but occasionally I might need to switch things up. This is something that I’ve felt like I should do for awhile now but have been resisting, I think because of pride. Which is completely ridiculous of course. So it is high time for me to eat some humble pie (or cobbler, as the case may be) and recognize that in order for my family and this blog not to suffer, some things have to give a little bit.

    I love cobbler!! But I’ve never used a box cake mix to make on, interest way to do it!

    Love simple! Looks delicious. Since it doesn’t call for fresh fruit, it would be a nice one to save for fall or winter.

    I’ve just been cutting out as much noise as possible lately. yesterday morning me and the bf went to a friends lake house in the middle of nowhere and just enjoyed each other’s company and time. I wish I’d had this recipe before the trip.
