I cannot believe that school is about a month away for us; I know that for some of you it comes even sooner than that! I feel like summer just barely started and I’ve been struggling to get back on some kind of routine so the school year doesn’t hit us like a Mack truck.
On these hectic summer days the last thing I want to be doing is standing in my hot kitchen for hours trying to get dinner on the table at a decent time. To combat this one of the things that gets a lot of use is my slow cooker.
This recipe for southwest chicken not only utilizes the slow cooker to help your kitchen stay cool, but it’s super simple and is something that our whole family loves! You can enjoy it over rice, with potatoes, or my favorite—on sandwiches with a side of Campbell’s Chicken Noodle Soup.
Something else to keep in mind is that this recipe serves a crowd. I need to be able to feed my family of six, plus my husband always likes to have leftovers for lunch the next day. You could easily cut the recipe in half, but it’s so yummy you’ll be glad if you don’t.
- 4 boneless skinless chicken breasts
- 1 jar of Pace Salsa
- 2 green bell peppers sliced
- a few sprigs of cilantro
- Salsa
- Guacamole
- Sour Cream

Place the chicken breasts, salsa, sliced green peppers, and cilantro in the slow cooker and cover.

Cook on low for 4-6 hours.

Take chicken out and place in your stand mixer with the paddle attachment to shred. Add a few spoonfuls of broth as necessary.

Once the chicken is fully shredded add in the green peppers and more broth to desired consistency.
I like to cut the chicken breasts in half before putting them in the slow cooker.
Have you ever used your stand mixer to shred meat? This is by far my favorite kitchen hack and one I use all the time! It works great with chicken and with pork—anything to make our lives easier, right?
Once cooked this meat is wonderful as-is, but I really recommend enjoying yours on a sandwich. Sprinkle some Jack cheese on the meat while it’s still hot so it can melt into ooey-gooey deliciousness. Then add some more Pace Salsa, guacamole, or sour cream as you condiment. Pile on lots of lettuce also, of course.
With so many Campbell’s Chicken Noodle Soup and Pace Salsa varieties to choose from it’s easy for me to pick out ingredients that the whole family will love. As a busy mom I also really appreciate that our local Walmart has these items conveniently near each other; take this opportunity to stock up on all those essentials you need for back-to-school meal planning!

YUM YUM YUM! This is actually one of my favorite things to cook. We brought our crockpot with us on our road trip, and I made this before setting out for one of our hikes in Utah. It was perfect to come ‘home’ to. My mom didn’t believe that it would be good with just a jar of salsa, but I quickly changed her mind! We use the chicken on everything from tostadas and tacos to nachos, but I’ll have to make a sandwich out of it next time! YUM (again!)

It is one of my favorite tricks! Just be careful because you can definitely over-shred and then you’re left with mushy meat, lol.
