Today is a special day, my littlest baby girl turns one. A whole year old.  I can barely believe it. 365 days ago I was having my weirdest labor yet (seriously, even the nurses thought it was odd). I knew that in honor of today’s special occasion, today’s post had to be something near and dear to my heart. Plus, I just celebrated my birthday! So, other than my kids, what do I love more than Diet Coke and cupcakes? These cherry chocolate cola cupcakes are sure to become a new favorite in your household.

These cupcakes are so easy to make–they’re very similar to my orange creamsicle cupcakes. Have you ever made cakes or cupcakes using soda for the liquid? It’s easy and makes for a really moist cake with just the tiniest hint of whatever soda you use. The flavor combination possibilities are nearly endless!

Cherry Chocolate Cola Cupcakes

For the cake part of these cupcakes you only need two ingredients, a cake mix of your choosing (for me it has to be chocolate, of course) and 12 oz. (or one can) of soda. Simply combine the cake mix and the soda as you would normally mix up a cake, then fill your cupcakes liners and bake according to directions. I do like to bake my cupcakes about 5° cooler than whatever it calls for on the box so they don’t get too done. That’s just a little tip from me to you. You’re welcome.

Ingredients
  • 4 cups C&H powdered sugar
  • 1/4 tsp of salt
  • 1/4 cup of milk
  • 1/2 tsp of vanilla extract
  • 1/2 tsp of cherry extract
  • 1/3 cup of soft butter
Instructions
  1. With a stand mixer combine all ingredients and beat until smooth. Add food coloring if desired. Add more powdered sugar or milk to desired consistency if needed.

This cherry frosting is seriously so good you’re going to want to fill the insides of the cupcakes with it too, so you might want to double your frosting recipe. Just sayin’.

    Yum! I love the combination of cherry and chocolate. I’ve never tried making cupcakes with soda, but it sounds pretty cool.
