Happy Pi Day everyone! To celebrate today I wanted to share what might be my favorite pie–chocolate pecan. When we lived in San Antonio we used to get this pie at Cracker Barrel, but you could only get it during the holidays, boo! Who says pecan pie is only for the colder months? Add in chocolate and this pie is perfect all year round, at least, I think so!

Despite what you may think,a chocolate pecan pie is actually quite simple to make. You basically just need to be able to measure and stir. Well, and turn an oven on, obviously. There are a lot fewer steps to making a pecan pie then making most fruit pies and it’s a good place to start if you haven’t made a pie before.

I remember there was a time when I was so intimidated by making pie crust. I’ve never been a big fan of pie crust anyway and it seemed way too overwhelming to try to make a crust that was flaky and delicious. However, I have since learned that it’s actually pretty easy to make the perfect pie crust. Here are a couple of tips:
- Ingredients for your pie crust should be cold, the butter needs to be just out of the fridge and be sure to use ice water.
- Use a food processer to mix your dough and then handle the dough as little as possible.
- Make an egg wash and brush the edge of the pie crust before placing in the oven to bake.

- 3 eggs
- 1/2 cup sugar
- 1 cup corn syrup
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/4 cup butter melted
- 1 cup pecans
- 1/4 cup semi-sweet chocolate chips
- 1 unbaked pie shell

Preheat oven to 350° and prepare your favorite pie crust in a 9 inch pan.

In a medium sized bowl, beat together eggs and then add in sugar and mix well. Mix in corn syrup, salt, vanilla, and butter.

Place pecans and chocolate chips into unbaked pie shell. Pour liquid mixture over the nuts and chips; the pecans will rise up to the top.

Cover the pie edges with aluminum foil or pie guard, then bake for 40-50 minutes, then remove cover and continue baking until edges are slightly browned, approximately 10 minutes.

Allow to cool before serving.

I can honestly say that pecan pie is my favorite pie, but I don’t recall trying chocolate pecan pie. It looks delicious!
