It’s no surprise that I’m a fan of s’mores. In the past I’ve shared how to make a Fall s’mores dessert bar, a recipe for s’more pancakes, and even s’more dipped strawberries. Trust me when I say that s’mores are good year round! Even if you can’t roast your marshmallows on a bonfire outside. Today I’m sharing with you something that is delicious and maybe just a little unexpected–microwavable Easter s’mores!
Easter s’mores
I think that oftentimes there are certain flavors and dishes that we associates with certain times of year. Pies are for Thanksgiving. Peppermint is for Christmas. Chocolate is for days that end in “y”… and s’mores are a summer thing, aren’t they? Or are they?! Personally, we’ve made s’mores all year long! In all types of settings and in all types of desserts (as I already mentioned). So why not make some Easter s’mores?
Love them or hate them, Peeps are essentially a giant sugar-covered marshmallow. It’s true they don’t puff up like traditional marshmallows do, but they do melt in the microwave to a warm and gooey consistency that melts your chocolate bar down perfectly. In fact, I kind of prefer making microwave s’mores because they’re fast and easy! That’s what she said.

microwave s’mores tips
The trick to making s’mores in the microwave is to not put the top graham cracker on until after you’re done cooking them. For some reason the top cracker will start to burn if you have it on during the cooking time. Just layer you s’more as normal leaving the top cracker off on a microwave-safe plate. Cook for about 10 seconds (depending on the microwave) and then place the second graham cracker on top. Easy peasy. Don’t try and make more than a couple at once though. These bad boys (bad bunnies?) do better when you’re only heating up one or two at a time.
For these cute Easter s’mores you’re going to want to make sure that you use the marshmallow bunnies rather than chicks so everything lays flat. Using vanilla wafer cookies in place of graham crackers would be a tasty Easter twist too.
