Although I do indulge in treats, for the most part I try to eat pretty well. One of the ways that I’m doing that is by trying to eat low carb most of the time. When you’ve been enjoying a low carb lifestyle as long as my husband and I have (a few years now) then you learn that you don’t have to sacrifice taste. I’m so excited to share two recipes today that are full of flavor, but not full of carbs with the help of Hidden Valley Ranch Seasoning Shaker. This recipe for Hidden Valley Ranch Chicken is sure to become a family favorite and the cauliflower bites are the perfect side dish! The best part? Chicken is a staple in our house because it’s so versatile. You don’t have to get tired of it because there’s always something new and delicious that you can do. I also love that you can bake, grill, fry, or make it in the slow cooker! This simple Hidden Valley Baked Ranch Chicken recipe makes this staple even better because it uses just three ingredients – the Seasoning Shaker is able to simplify the preparation process! It only takes about 30 minutes from start to finish and uses one pan, so the hardest part will be… actually there is no hard part!

Ingredients
  • 4 boneless skinless chicken breasts
  • 2 tbsp melted butter or olive oil
  • 2 tsp Hidden Valley Original Ranch Salad Dressing and Seasoning Mix
Instructions
  1. Preheat the oven to 425°F. Place chicken breasts in a plastic sandwich bag and pound until they are 3/4 of an inch thick. Place the chicken breasts in a bakig dish to fit.

  2. Brush with melted butter or olive oil on both sides. Sprinkle or shake the ranch seasoning mix over the chicken on both sides. If there is any remaining butter or olive oil, drizzle over the seasoned chicken.

  3. Place in the oven and bake for 20+ minutes, until cooked through and no longer pink in the center. Remove from the oven and let rest for a few minutes. Serve hot.

Cauliflower is a low-carb lovers best friend. It seems to be able to replace an awful lot of carb-filled sides! I personally love it mashed as a replacement for potatoes, or riced as a replacement for, well, rice. Because of the Hidden Valley Seasoning Shaker, these cauliflower bites pack a powerful flavor punch into every bite with minimum ingredients and effort on your part!

Ingredients
  • 1 large cauliflower head (about 1 1/2 to 2 pounds) cut into 1 1/2 inch florets
  • 3 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter
  • 3/4 cup panko crumbs
  • 1 1/2 tsp Hidden Valley Ranch Original Ranch Salad Dressing and Seasoning Mix
  • Kosher salt and ground black pepper to taste
Instructions
  1. Preheat the oven to 400°. Scatter the cauliflower florets evenly over a baking sheet. Drizzle with olive oil. Roast for about 25 minutes, flipping once halfway through cooking time, until the florets are browned in spots and cooked through.

  2. While the cauliflower is cooking, melt the butter in a skillet set over medium heat. When it is just beginning to brown and smell nutty, add the panko crumbs and the Hidden Valley Original Ranch Salad Dressing and Seasoning Mix. Cook, stirring frequently, until crumbs are golden brown and toasty, 5-7 minutes.

  3. Remove the cauliflower from the oven and top with the breadcrumbs. Garnish with parsley, if using. Serve for dipping with Hidden Valley Original Ranch Dressing or your favorite dip.
