Can you believe that’s it’s July first?! This year is flying by so quickly! I would be upset by it but the fact that it’s Independence Day this week kind of makes up for it. Our family loves the fourth of July and all the fun celebrations that come with it. Parades, barbecues, family gatherings… if you’re looking for something to bring to your next Independence Day gathering, look no further. July 4th s’mores brownie bars
You know me–I just love taking a simple dessert and putting a special spin on it. Boxed brownie mix really can be so delicious if you just make a few tweaks. Layered brownies are a great way to take your brownies up a notch and really give them a wow factor.

These s’mores brownie bars have a layer of s’mores OREO cookies in the middle and, oh my word–it’s amazing! If you can’t find any, any type of vanilla OREOs should work. Pour about half the brownie batter in your prepared 9×9″ dish and then line the OREO cookies up on top. Cover the cookies with the rest of the brownie batter and bake most of the way. You’ll want to leave about 5-8 minutes at the end of baking so check your brownies periodically.
Once your brownies are almost done take them out and place marshmallows all over the top. I liked these festive star marshmallows but any marshmallows will work for these s’mores brownie bars. Keep in mind they don’t have to be touching each other because they’ll puff up as they heat in the oven.

Pro tip: cut these gooey s’mores brownie bars right away! As they cool and harden they’re a lot to trickier to cut cleanly through the marshmallow top. Don’t worry though, they still taste amazing the second and third day… if they last that long.
