Let me start by saying that I am not the best cake decorator by any means. However, I’m also a big believer that something doesn’t have to look beautiful to taste delicious. I whipped up this cake for a little St. Patrick’s Day fun and even though it could look better, it still tasted great. This simple rainbow pinata cake is a cinch to decorate, and if it’s not a hot day that leaves you buttercream melting like mine then it will turn out even better looking.

Fail number one on this cake, I had originally planned to do green ombré layers but quickly realized I didn’t have enough white cake mix to dye. So Plan B was to alternate green and chocolate. Okay, I’ll just roll with it. Construction of a pinata cake is simple–you just need to cut out the center of the cake so that you can fill it with candies, sprinkles, or whatever. Be sure to frost between all layers like you normally would. Then fill the cavity with your pinata rewards before placing the top layer on.
Fail number two with this cake came when it was time to frost it. I’m no newbie when it comes to buttercream frosting but something was off this time. I think my kitchen was just to hot which is crazy because–hello–it’s March! Basically though the idea with this technique is that you dirty frost the entire cake. Then you dab on gel colors and using an offset spatula smooth it across the side of your frosted cake. Make sure to leave some white between so your colors don’t run together .
In the end this rainbow pinata cake might not have turned out exactly how I wanted it but that’s kind of how life goes, isn’t it? As I said, it still tasted good (maybe even better because chocolate and vanilla together–yum). Pinata cakes are always fun to cut into and are especially a big hit with the kiddos!
