Mother’s day is this weekend and I know what you’re thinking–how is it already the middle of May?! Just because it’s going to look a little different this year doesn’t mean that we can’t still make it a special day. At least, that’s what I’ve told my husband and kiddos about a million times. So if breakfast in bed is on your wish list pass this recipe for honey baked overnight French Toast on to your spouse. I promise your whole household will love it!

Honey Baked Overnight French Toast

In case you’re new to the concept of overnight French Toast let me tell you what it is. Are you ready? It’s French Toast that you prepare the night before and then bake in the morning–just like the name implies, haha. So the concept really isn’t hard to grasp and believe it or not it actually is even better than traditional French Toast. It takes a little more prep work but it’s definitely worth it. It’s far less labor-intensive than French Toast you cook on the stove top since you don’t have to stand there the whole time.

This recipe is very similar to my recipe for strawberry overnight French Toast except for the use of honey. In fact, I kind of discovered it by accident one day. I was all ready to make one of our favorite breakfasts but I realized I was out of corn syrup. When I was searching online for a substitute for corn syrup I saw that you can use honey instead.

We’ve also come to prefer Brioche bread to the French bread used in the original recipe I shared. Oftentimes stores will even have specialty flavors of Brioche bread like apple cinnamon or chocolate. So the possibilities are endless! I like to get different types of bread when I’m making a large batch at family gatherings.

Honey Baked Overnight French Toast

This French toast recipe is the perfect breakfast for busy mornings since you make it the night before!

Ingredients
  • 1 cup brown sugar
  • ½ cup butter
  • 3 TBSP honey plus more for drizzling
  • 5 eggs
  • 1 ½ cups milk
  • 1 tsp vanilla extract
  • 1 Brioche bread loaf cut into 8 thick slices
Instructions
  1. Mix together brown sugar, butter, and honey in a saucepan and melt over medium heat. Be careful not to let the butter mixture burn.

  2. Prepare a 9×13" pan with cooking spray and pour the butter mixture in.

  3. Mix eggs, milk, and vanilla extract. Lay the bread slices side by side in the pan and pour all the egg mixture over it.

  4. Drizzle more honey on top of the Brioche slices and then cover the pan and refrigerate overnight.

  5. In the morning take the pan out of the refrigerator and place in over while it preheats to 350°. Bake for approximately 35 minutes.

    Oh. My. Lanta. I have never heard of overnight toast, but this looks freaking delicious. Excuse me while i go through both loaves of bread in my cabinet.
