Is everyone having a fantastic summer so far? I have to admit, even though it’s pretty different than what our family had planned we’ve been enjoying ourselves. Lots of time spent in the pool and hiking and of course–chowing down on our favorite summer treats. It’s been pretty hot and we’ve been cooling off anyway we can. My preferred method is with an ice cold Diet Coke, but my kiddos will go for ice cream anytime. Keep reading for these special homemade ice cream sandwiches dipped in white chocolate peanut butter.

Our family loves to make homemade ice cream but of course you can use homemade or store bought for these ice cream sandwiches. Since homemade ice cream takes awhile to firm up it might be wise to make it ahead of time so assembling your sandwiches is easier. You can also dip them in any type of melted chocolate you like. But my expert opinion is that this blend of white chocolate and peanut butter is perfect with the chocolate “cookies”.

Fair warning–these sweet treats aren’t the easiest to eat. They’re thick and start melting faster than you’d think. You’ll definitely want to have napkins handy and a plate isn’t a bad idea either. Don’t worry though, I’ve never heard my kids complain as they scarf them down. Luckily, it’s summer and you can always just take the kids out back and hose them down afterwards, right?

These homemade ice cream sandwiches can be made ahead of time with either homemade or store bought ice cream, then frozen until ready to eat!
- 1 box Devils Food cake mix do not use ingredients listed on the box
- 2 eggs
- ¾ cup shortening
- ½ cup peanut butter morsels
- ½ cup white chocolate chips
- chocolate sprinkles optional

Mix all ingredients (mix, eggs, shortening) together until well-incorporated. Again, do NOT add the ingredients listed on the cake box.

Fill the cavities on your Pampered Chef Snack Bar Maker Set about halfway. (If you don't have a Snack Bar Maker set than roll between two sheets of parchment paper. Bake on a cookie sheet and cut into rectangles once it's done cooking once it's cooled.)

Bake at 350° for 8-10 minutes. Remove from pan once cooled.

Once your ice cream sandwich "cookies" are ready, spread a thick layer of ice cream between two "cookies" and place back in the freezer to firm up again.

Melt together peanut butter morsels and white chocolate chips in microwave. Start at about 45 seconds at 60% power. Stir, and repeat at 30 second intervals until completely melted.

Dip ice cream sandwiches in the peanut butter dip and then dip into sprinkles if desired.
Depending on which method you use for baking your ice cream sandwich “cookies” this recipe should yield 6-10 ice cream sandwiches.
