After making the Mexican hot chocolate hot cocoa bombs last month I really wanted to try something different. Something a little magical. Something that would go along with St. Patrick’s Day–because what’s more magical in real life than a rainbow? In reality, I probably just really wanted to have a justification for buying some dehydrated magical marshmallows. Either way, the results of my white chocolate hot cocoa bombs experiment turned out very magical indeed with a fun rainbow surprise.

Personally I love white hot chocolate. In fact, I always look for it on the menu of any coffee shop I go to. So I knew I had to try to make a white chocolate hot cocoa bomb, but I was a little nervous about working with the melted white chocolate. White chocolate has a much lower melt point and can easily burn or turn lumpy while you’re trying to get it to the right temperature. I knew from pervious experience I could get it melted down correctly, but would I be able to make spheres that were solid enough for hot cocoa bombs?

White chocolate is different than milk chocolate because it contains no cocoa solids and is usually made with cocoa butter. Because of its temperamental nature some people prefer to use a double boiler method to melt the chocolate. However, I find that you can still use a microwave if you carefully follow the instructions on the bag. If you’re still nervous about using white chocolate you can always use vanilla almond bark to yield the same results a little easier. I just personally prefer using real white chocolate.

These hot cocoa bombs actually contain no hot chocolate powder! Of course, you could always purchase white hot chocolate drink mix if you want to. But I found that with the ingredients inside the white chocolate hot cocoa bombs the hot chocolate that results is nice and creamy and full of flavor. And when you pour the steaming milk over these bombs and stir it all together the hot cocoa turns a beautiful color!

White Hot Chocolate Rainbow Hot Cocoa Bombs

These hot cocoa bombs are full of creamy, white hot chocolate and have a fun rainbow surprise when you add the milk!

Servings: 6 hot cocoa bombs

Ingredients
  • 1 10 oz. bag of white chocolate chips
  • 1 bag of white truffle candies
  • 1 10 oz. bag of colored "unicorn" chocolate chips
  • 1 bag of dehydrated mini rainbow marshmallows
Instructions
  1. Clean and dry your chocolate molds. Wipe with a paper towel to help ensure your bombs comes out streak-free.

  2. Melt you chocolate in the microwave by instructions on the package. Low and slow is the best way to temper your chocolate in the microwave. Heat at approximately 30 second intervals at 50% power, stirring well between each time.

  3. Spoon white chocolate into mold and cover the surface. Take your time to make sure that the chocolate goes all the way to the top of the mold and you don't have any bare spots. One bag of white chocolate chips should make approximately 12-16 halves, or 6-8 completed bombs depending on the size of your molds.

  4. Allow to harden completely before popping out of the molds. Place in fridge or freezer to set up quicker.

  5. Fill one half of your bombs with 1 white truffle candy, 1 tbsp of colored chocolate chips, and 1 tbsp of rainbow marshmallows.

  6. Heat a pan on the stove on low heat. Take the other half of your molds (the ones that are empty) and very briefly press the open side to the hot pan to melt the rim of the white chocolate. Quickly join to your half that has the fillings in it.

  7. **Alternatively, you can melt more chocolate and pipe it along the rim of one piece and press it to the other piece. This also works well if your chocolate didn't make it all the way up your mold and you have to fill gaps.

  8. Once your hot cocoa bomb is completely hard decorate with more melted chocolate, using colored chocolate wafers will help your bomb be more colorful once it's melted!

  9. Once you are ready to use your hot cocoa bomb place in a mug and top with 1 – 1½ cups of steaming milk. Enjoy!

    What a fun idea to use the white truffles. Those rainbow marshmallows are a favorite at our house. We got them to make unicorn hot chocolate and the kids love them.
