Today’s recipe for an easy mixed berry compote is made with frozen fruits. Our family likes to have big breakfasts on Sundays. When I spotted the big box of 188 count First Street Buttermilk Mini Pancakes and the 3 pound bag of the frozen First Street Berry Medley I knew they would be the perfect combination! Not only could we have a filling and delicious breakfast, but making it and clean up would be a breeze! I decided to make an easy mixed berry compote to go with our pancakes. If you think you need fresh fruit to make a tasty fruit topping, you’re wrong!

This delicious compote is easy to make anytime of year because it uses frozen fruit. Great on top of ice cream, yogurt, pancakes, and more!
- 4 cups Frozen Mixed Berries, Berry Medley
- 2 tbsp honey
- 1 tsp vanilla extract

Cook 4 cups of frozen berries and 2 tbsp of honey over medium heat until fully heated. Mash with stirring spoon or potato masher near the end once it's cooked.

Turn down heat and continue cooking until liquid has reduced by half. Stir in vanilla and take off heat.

My only two questions are: Do I have to can this in boiling water or can I just keep it in the fridge indefinitely? Besides pancakes, which I rarely eat, what else can I do with this?

Hi Jeannete! This would be delicious as a topping for crepes, ice cream, toast, or cake. Use it to make a crisp or cobbler. You could also layer it a parfait with yogurt and granola. I don’t have experience with canning it although I don’t know why you couldn’t using a water bath method.
