National Ice Cream Day is this Sunday. And the answer is yes–there’s a day to celebrate everything. But seriously, I’m all for a day that celebrates America’s favorite chilly treat. Did you know that 96% of Americans eat ice cream? I personally haven’t been able to eat the real stuff for years (although occasionally I cheat much to my stomach’s sorrow) but I still love to make it and buy it for my kiddos! Today I have the simplest ever homemade ice cream cake tutorial (because I’m not even sure I can call it a recipe) to share with you.

As you’ll see in the video below, this ice cream cake recipe comes to together faster than you can say, “The cold never bothered me anyway.” Okay, not really but it’s still pretty fast. Because really, who has time to make an elaborate dessert in the summer? Not me! I want to be outside in the fresh air and the sunshine!
With just three (or four) store-bought ingredients you can impress your family or friends with a delicious ice cream cake. And the best part is that it’s so easy to tailor the flavors to anything you want! You could use Neapolitan ice cream sandwiches, or chocolate whipped topping, or even a marbled loaf cake! The possibilities are endless so you may just need to make more than one.
This ice cream cake is made from just 3 ingredients and takes less than 5 minutes! Easily customize the flavors too!
- whipped topping, I use a non-diary whipped topping I make fresh. Any type of whipped topping will work.
- ice cream sandwiches
- loaf cake, sliced
- sprinkles, optional

In a deep dish, lay out unwrapped ice cream sandwiches to cover the bottom. Cover with a layer of whipped topping.

Lay slices of loaf cake on top of the whipped topping. Spread more whipped topping on the cake layer. Put small chunks of cake in the empty spaces to create a solid layer.

Finish off with another layer of whipped topping and add sprinkles on top if desired.

Place in freezer to firm up. Then slice up and enjoy when you're ready! If it's too frozen and you're having trouble cutting it warm up your knife under hot water first.
