Pumpkins are rich antioxidants, including beta carotene, an antioxidant that your body turns into vitamin A. They also are high in potassium, and contain vitamin C and fiber. These pumpkin pancakes are perfect for fall and easy to make.
- 2 cups dry pancake mix
- 1 tsp cinnamon
- ½ tsp allspice
- ¼ tsp ginger
- ¼ tsp nutmeg
- 1 ½ cups milk
- 1 cup pumpkin puree , not pumpkin pie

Combine dry ingredients together in a large mixing bowl. Mix in wet ingredients until well incorporated.

Spoon batter onto hot, buttered griddle. Flip over to cook on both sides.
