I thought about how peanut butter blossom cookies kind of look like eyes. But I could make them look even more like eyes to make them the perfect Halloween cookies! These monster eye cookies come together really easily. They also bake really fast! In addition to the ingredients for these delicious sugar cookies, you’ll also need small chocolate candies, colored sanding sugar and small eyeball sprinkles. You can usually find eyeball sprinkles in the baking aisle at this time of year. If you’re having a hard time locating them, you can order them on Amazon here.
Traditional peanut butter blossoms use peanut butter cups and a peanut butter cookie dough. These Halloween cookies use a sugar cookie base and you can easily switch up the chocolate candy! We used peanut butter cups, Kisses, and Rolos. Make sure you unwrap them before you’re ready to use them, because they have to be placed in the cookie when it has just come out of the oven. This is a great cooking job for your little one… if you can trust them around chocolate.

Of course, there’s no reason why you couldn’t use peanut butter cookie dough if you really want to also. The main thing that makes these monster eye cookies are the candy eyeball sprinkles and colored sanding sugar. These are really easy to make, making it the perfect spooky treat to make with your kiddos for Halloween!

This fun twist on peanut butter blossoms uses the sugar cookie recipe from Glorious Treats as a base to make spooky monster eye cookies for Halloween!
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1 cup unsalted butter (at room temperature)
- 1 cup sugar
- 1 egg
- 1½ tsp vanilla extract
- 2 dozen small chocolate candies (like Kisses, peanut butter cups, or Rolos–unwrapped)
- colored sanding sugar
- candy eyeball sprinkles

In a medium bowl stir together flour and baking powder. Set aside.

In your electric mixer bowl cream together butter and sugar.

Add the egg and vanilla and beat together until blended.

Add the flour mixture in a bit at a time. This part is best done with the dough hook attachment of your electric mixer.

Let dough chill in refrigerator for 10-30 minutes. Unwrap chocolate candies for later.

Preheat oven to 350℉. Make heaping tablespoon size balls of dough and roll in colored sanding sugar.

Bake for approximately 10 minutes. Place an unwrapped candy in the middle of your cookies as soon as they come out of the oven (while still warm) and then immediately place a candy eye sprinkle on top.
